Pai Pau ( Hongkong Famous Sweet Bread)

Akhirnya ketemu juga resep roti sisir ini, selama ini gak tau kalo nama beken aslinya Pai Pau sampai ketemu di buku resep terbitan Hongkong, langsung deh pengen nyobain.

Here is the recipe :
250 gr Bread Flour
  60 gr Sugar
100 gr Milk
  75 gr Whipping Cream
    1 Egg yolk
   10 gr Yeast
  40 gr Butter
 10 gr Full Cream Skimmed Milk
 10 gr Condensed Milk
  50 gr Pre-fermented dough ( tanzhong)

Method :

Place milk in bowl mix with yeast. Add in all ingredients into yeast solution exclude butter.
knead until smooth, add in butter, even dough until elastic.
Place buns in a greased tray, allow to rise 30 min. Divides buns into 50 gr each. Roll firmly into a ball, then rise further 30 min. Roll into stripe shape. Allow to rise on greased baking tray in " Row" until 1 1/2 size.
Brush with egg. Place in a pre-heated oven with 180 C for about 15 min.

Pre-fermented dough :
125 gr Bread Flour
  80 gr Water
    2 gr Yeast
pinch of salt

Mix all ingredient together and let it prove for at least 2 haours before using.

Roti Tawar Susu ( Milk English Bread)



Milk English Bread

Ingredient :
250 gr Bread Flour
  10 gr Milk Powder
    2 gr Salt
  30 gr Egg white
150 gr Warm Milk
    4 gr Yeast
  20 gr Vegetable Shortening
  25 gr Sugar

Method:
Dissolve dried yeast in warm milk and mix well. Let it stand for 1 minutes.
Combine dissolved yeast solution with all ingredient (except butter). Knead until dough is smooth.
Add vegetable shortening and knead until dough can be strecthed thinly without breaking.
Roll dough into shape of ball. Let stand for 10 minutes.
Roll dough into a ball again.
Put dough into loaf pan. Cover with cling wrap to let dough rise further.
Let dough risen up to 90% of pan. Put into oven preheated to 180C.
Bake for 30-35 mintues.

Tool : Use 450 gr loaf pan

Mexican Coffee Bread



Mexican Coffee Bread
(Recipe for 10 little buns)

For the dough:

250g bread flour
40g caster sugar
3g salt
4g yeast
1/2 beaten egg
135g fresh milk
30g butter

For the filling:

100g salted butter ( cut 10 pieces @ 10 gr)


For the topping:

50g butter
40g icing sugar
38g beaten eggs
1 teaspoon granulated coffee dissolve with 1 teaspoon water
pinch of salt
50 plain flour

How I made it:

For the toppings, beat the softened butter with icing sugar until everything well combined. Gradually add in beaten eggs then the coffee mixture. Add in
pinch of salt with the flour and beat until everything well incorporate. Place the mixture into a piping bag and keep in the fridge until ready to use.

For the dough, knead all the ingredients together except salt and butter. When the dough become a smooth dough add in salt and butter and continue the the kneading process
until the dough become smooth and elastic but not sticky. Knead it for approximately 30 minutes at speed 2.
Divide the dough into 10 little doughs and shape it into round ball shape. Let it rest for 15 minutes before add in the filling.
Roll out each doughs to a flat disc and add the butter filling. Seal it tightly. (make sure you seal it tightly otherwise it will split out during baking)
Place each doughs on a baking tray, make sure they sit a part from each other because they might stick to each other during the baking. Cover the doughs with cling film and proof for 50 - 60 minutes.
Before the doughs place into the oven, pipe out the filling in a spiral start from the top center of each buns. Bake for 12 minutes at 200'C preheated oven.

Macaroni Schootel




MACARONI  SCHOOTEL

Bahan A:
225 gr     macaroni 
2 sdm     minyak goreng

Bahan B: 
3 sdm     mentega 
1 bh        bawang Bombay, cincang 
1 bh        bawang putih, cincang
3 sdm     tepung terigu
350 cc     Susu cair
1 sdt       Mustard
½ sdt      Pala bubuk
 ½ sdt     lada bubuk
1 sdt       garam
1 sdt       kaldu bubuk
1 klg       Korned beef

Bahan C: 
3 btr        telur, kocok lepas
75 gr       keju parut

Bahan D: 
3 btr        telur, kocok lepas
250 ml    susu cair tawar
75 gr       keju parut


Cara membuatnya :

Bahan A: rebus makaroni hingga mekar, beri sedikit minyak goreng supaya tidak lengket. Angkat tiriskan. Sisihkan.

Bahan B: Panaskan mentega , tumis bawang Bombay dan bawang putih hingga layu, masukkan tepung terigu, aduk rata, tuang susu sedikit demi sedikit sambil tetap diaduk rata. Masukkan, garam, merica bubuk, pala bubuk, kaldu bubuk, mustard, dan terakhir korned beef, aduk terus hingga tercampur rata. 

Masukkan bahan C, aduk lagi sampai rata. Test cicip. Tuang kedalam pinggan tahan panas ukuran 20x30x5cm atau yg setara. 

Bahan D: campur telur dan susu, aduk rata. Tuangkan kedalam makaroni yg sudah dipinggan. Taburi dengan keju parut. 

Angkat, hidangkan bersama saus sambal dan saus tomat.

Wood Lines Swiss Roll









Wood Lines Swiss Roll


Bahan :
I. Wood Lines motif :
    40 gr mentega
    15 gr coklat bubuk
    30 gr gula halus
    30 gr tepung terigu
    50 gr putih telur

II. Roll cake :
    100 gr kuning telur
      50 gr gula halus
      40 gr tepung terigu
      50 ml soya bean oil
     120 gr putih telur
       60 gr gula kastor

Cara membuat :
 I. Cairkan mentega, masukkan coklat bubuk, aduk rata.
    Tambahkan gula halus dan tepung terigu, aduk rata.
    Tambahkan putih telur, aduk rata.
    Tuang ke loyang yang sudah dialasi silpat atau silicon paper, buat motif kayu dengan scraper gerigi.
    Sisihkan.

 Note : adonan masih bersisa, tidak terpakai semua.

II. Aduk rata dengan balon whisk kuning telur, gula halus dan soya bean oil sampai rata.
    Masukkan tepung terigu, aduk rata.
    Kocok putih telur hingga berbusa, masukkan gula kastor secara bertahap, kocok hingga soft peak.
    Tuang adonan putih telur ke dalam adonan kuning telur, aduk rata.
    Tuang adonan ke atas motif kayu yang sudah di buat sebelumnya. Ratakan dengan scraper plastik.
    Panggang dengan suhu 180 C selama 8-10 menit, api atas bawah. 
    Ambil kertas putih, olesi dengan mentega taruh kue bagian coklat di bagian bawah, olesi kue bagian
    kuning dengan mentega/ selai. Gulung dan padatkan, biarkan sebentar.
