Cheese Chiffon Cake




Cheese Chiffon Cake
Source: Seri Masak Femina Primarasa - Cake Istimewa Semua Yummy
Ingredients:
150 g cake flour, sifted
100 g grated cheddar cheese ( I use 50 gr Edam Cheese+50 gr Cheddar Cheese)
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
100 g caster sugar
100 ml oil
100 ml milk
5 egg yolks (about 100 g)
7 egg whites (about 210 g)
1/2 tsp cream of tartar (optional)

Method:
Preheat oven at 180 Celcius degree. Prepare a 24 cm chiffon pan. Do not grease the pan. Mix flour with grated cheddar cheese, baking soda, baking powder, salt and 2 Tbsp castor sugar, mix well. Make a whole in the middle of flour mix, pour in oil, milk and egg yolks. Blend with balloon whisk until smooth, set aside. Beat egg whites with electric mixer at medium speen until frothy, gradually beat in cream of tartar and the remaining sugar. Continue beating until egg whites form soft peak. Gradually fold egg whites into flour batter, blend well. Sprinkle the inside pan with water. Pour batter into the pan. Bake for abour 75 minutes. Test with skewer. Take out the pan from the oven, turn it upside down on its legs or on the neck of a bottle. Let cool in this upside down position. Take the cake out of the pan using long knife or spatula.

Apple & Crumble Tart


Fills with Granny Smith Apples n Cream, topping with Crumble n Walnut...hmmm...

This is the Tart Pastry before bake....with ceramic beans for even surface.


Sweet Short Crust Pastry
Ingredients :
A. 200 gr Plain Flour
       20 gr Milk powder
     110 gr unsalted butter
       50 gr icing sugar
     1/4 tsp salt
B. 2 1/2 tbsp water

Method :
1. Mix ingredients A till crumbly. Add in ingredients B, mix to form dough.
2. Shape it into ball and press it flat. Wrap it up with plastic and chill it in refrigerate for 30 minutes.
3  Press pastry into tart mould. Prick some holes in it and put some ceramics beans over greaseproof paper. Rest for 20 min. Bake in preheated oven at 180 C for 20 to 25 min.

Apple Pudding Filling
Ingredients:
A. 40 gr unsalted butter
     70 gr caster sugar
    1/4 tsp ground cinnamon
       3 Granny Smith apples ( diced)
      50 gr sultanas

B. 140 gr whipping cream
     1/2 tsp vanilla essence
        2 eggs (grade A)

Method :
1. Pour A into pot. Cook over medium low heat for 10 min until the apples softens. Divide into equal portions and place A into baked tarts.
2. Mix B until well combined and filter it, divide into equal portions, pour it onto apple tarts. bake in preheated oven at 180 C for 8 to 10 min until half cooked.

Crumble
80 gr plain flour
  2 tbsp brown sugar
50 gr unsalted butter (melted)
40 gr chopped walnut

Mix all ingredients untill fluffy. Sprinkle it onto half-baked tarts. bake in preheated oven again at 180 C for 10 to 15 minutes.

Durian Cheese Puff



Durian Cheese Puff

Bahan Sus :
  50 gr margarin
100 ml air
 1/4 sdt garam
  25 gr keju cheddar parut
  50 gr tepung terigu ( 50% plain flour + 50% bread flour)
 1/4 sdt baking powder
   2 butir telur
  20 gr keju cheddar parut untuk taburan

Bahan Vla Durian :
150 gr daging durian + 300 ml susu cair, blender halus
  75 gr gula pasir ---> ganti jd 50 gr
 1/4 sdt garam
  35 gr tepung maizena + 35 ml air, larutkan
    1 kuning telur



Cara membuat :
1. Sus : rebus margarin, air dan garam sampai mendidih. Tambahkan keju parut, tepung terigu, dan baking powder. Aduk sampai kalis. Angkat dan biarkan hangat.
2. Tambahkan telur satu per satu sambil dikocok rata. Masukkan dalam kantung plastik segitiga. Semprot diloyang yang di oles margarin. tabur keju cheddar parut.
3. Oven 20 menit dengan suhu 210 C.
4. Vla Durian : rebus campuran durian, gula pasir dan garam sampai mendidih. Kentalkan dengan larutan tepung maizena. Masak sampai meletup-letup.
5. Tambahkan kuning telur. Aduk sampai kental. Ankat dan dinginkan. Masukkan dalam kantung plastik segitiga.
6. Buat lubang di sus yang sudah dingin. Semprotkan dengan vla durian.
